Butter Cupcakes *
Butter Cupcakes
175g butter, softened
200g coarse sugar
2 eggs
1 tsp vanila essences
225g multipurpose flour
Half tbsp baking powder
125 ml plain yogurt
2 tbsp fullcream milk
Topping : Cream Cheese
3 tbsp course sugar
1 tbsp Whipped Cream
125 Cream Cheese
Method:
1.Preheat the oven 180c, line the muffin case with paper cupcakes
2.Put the butter and sugar in a large bowl and, using an electrical whisk, beat together until light and fluffy. Beat in the eggs and vanilla extract.
3. sift in flour and baking powder and gently fold into the mixture with the yogurt, until well combined. Spoon the mixture equally into the muffin case
4. bake in the oven for 25-30 minutes until golden brown and springy to the touch. Leave in the pan for 5 minutes and the transfer to a wire rack and leave to cool.
5. When the cupcakes are cold, make the froasting. Beat the Cream cheese and sugar together into a bowl and gradually stir in the whipped cream until smooth
6. Piped the froasting on the top of each cupcakes.
